This that and a little bit of everything--Day 2--09-13-2011
So I took the kids to White Rock Lake Park and I was super jealous that all these people were running and wish I could be with them too. But it was just nice to sit there too on the bench watching the my kids play and push each other too. So I am going to try something on this blog too, everyday try to write down a new recipe or give my OPINIONS about certain things and possibly people too.
Let's give this a shot, recipe # 1 if you want to try it, it's a favorite in the family, Chicken Tortilla Casserole, and its pretty healthy too. And you can alter the recipe to different things that you like too.
Things you'll need: 6 to 8 boneless skinless chicken, 1 whole yellow onion, 1 lg jar of salsa (I prefer pace picante chunky salsa, but whatever you like), 1 family size jar of cream of chicken campbell soup, corn tortillas, 1lb extra sharp cheddar cheese and milk
Now: Fill a pot with water with the chicken inside and your onion (quartered), and boil (oh add some kosher salt for some excellent taste).
Next: While that is coming to a boil, in a large bowl add your cream of chicken, and salsa, mix that together then add milk (about 1 cup/you kind of want a thick and creamy consistency, so you can add more or less if you like).
Then: Shred your chicken, and cut your corn tortillas in quarters too, in a pyrex pan or aluminum foil pan, whatever you got with high walls for baking purposes basically. You are going to layer your dish. Butter or oil spray your pan on the bottom so you don't get that stuck mess. Layer corn tortillas on the bottom, chicken, then your sauce mix, then some shredded cheese, and just repeat that until you reach the top or you run out.
Finally: Bake at 350 for about 2 1/2 hrs and then the final 30 minutes take the foil off so your dish gets that nicely baked crispy top. Then eat it with a nice salad with some Robusto Italian dressing.

This that and a little bit of everything--Day 1
Day 1, 09-13-2011, 12:00am, and this my first time trying a blog and getting a few things out there for other people to read...why? I want to be able to tell others about things I see and do and share different experiences with others as well...whether they are good or bad. And this being my first time doing something like this I might be a little boring in the beginning but I can assure you of one thing...that this is going to be fun.
